Serves 4. **5-8 days marinating required.

  1. Rinse Matjes Filets with cold water.
  2. Set filets in a large bowl with cold water for 1 hour.
  3. Drain water.
  4. Peel and slice onion in fine rings.
  5. Peel and slice quartered apple in fine slices.
  6. Mix cream and vinegar.
  7. Using a ceramic or porcelain pot, layer your ingredients.
  8. Start with some onions, a little cream/vinegar mix, apples, herring, bay leaf, berries
  9. Repeat until all ingredients are used evenly in layers.
  10. Top should be onions, the sauce should just cover it all.
  11. If short sauce, mix a little more cream and vinegar and add on top.
  12. Cover thoroughly with plastic wrap sitting right on top of your last layer.
  13. Let the herring sit 5-8 days to marinade.
  14. Serve with skin-on boiled potato or fresh baguette.

  • 350g Cream
  • 2 Bay Leaves
  • 6 Juniper Berries
